Easy Cooking: Shredded Chicken

As I have mentioned in the past, I never seem to find enough time to cook and prepare all the weekly meals that I would like to.  Today I am sharing with you one of my weekly "short cuts".  The more that I can get ahead of time the quicker I can throw my meals together on a daily basis.

Enter shredded chicken.  I simply take a family size pack of boneless skinless chicken breast and turn it into a batch of shredded chicken in about a half hour.  It is so simply and easy and provides for multiple different meals throughout the week.

It is seriously as simple as 1, 2, 3.

1. Throw all of your chicken into a large boiling pot of water.  Cook for 20ish minutes, until cooked all the way through and can pull apart easily with a fork.

2.  Throw all cooked chicken into your stand mixer.

3.  Turn on low for about a minute, and Voila- Done!

See, seriously simple.  I just throw it in a big container in the fridge and pull a little out for each meal I want to throw together.  Some of my favorites are:
  •  Avocado Chicken Salad,  just take chicken, an avocado and some seasoning salt and mash it all together.  It makes for a great easy lunch.
  • Chicken Curry, take chicken and rice and top with Trader Joe's yellow curry sauce (love this stuff!)
  • Chicken Tacos, throw some chicken in tortillas and top with cheese, avocado, salsa or any of your other favorite toppings.
It's also great to throw in other recipes.  Like the chilaquiles casserole I shared with you the other week, or even whipping up a batch of chicken chilli.
