Easy Cooking: Homemade Energy Bars

The other day I saw a recipe pop up on my Facebook feed for DIY Larabars.  I had a collected a few homemade energy bar recipes, but had yet to give any of them a try.  Seeing this pop up on my feed was a sign.  I used it as a starting point, here is the recipe at 100 Days of Real Food.  The only problem was that I could not find the dates it was asking for, admittedly I only checked 2 stores.  The recipe is extremely simple, you know exactly what you are putting into it and it is easy to make modifications to fit what you want.


In these bars I used:
  • 1 cup raw cashews
  • I cup figs
  • 1/4 cup peanut butter
  • A few tablespoons of chia seeds
  • Coconut
You just put everything into the food processor, add some water for consistency.  A tablespoon or two will do, I just eye balled it.  After everything was mashed down, ground, and starting to stick together I put it in between two pieces of wax paper and used my hands to spread it out.  You can make them whatever size you desire.  I put it in the fridge for awhile to help it set, and then just cut them into bars and wrapped them individually in saran wrap.  They are very flavorful and full of nutrients.

I did discover through this process that it is probably valuable for me to invest in a better food processor.  I have one of those mini ones, and it definitely started smoking while trying to grind all of this down.  I'm assuming that wasn't a good sign!

Love  a recipe that is quick and easy.  I have a couple more recipes for snack bars to take for a test drive, I'll let you know how they turn out.  Do you have any favorites?
